When it's warm outside, it's okay to move quickly in the kitchen – but with flavor, please! This fruity summer salad is light, aromatic, and prepared in just a few minutes. The special highlight: a sophisticated dressing with TEABALLS IKO and TEABALLS Peach. Fruity, delicately tart, and with a hint of basil – simply perfect for balmy evenings on the balcony or patio.
For the dressing
1 teaspoon honey
1 tsp balsamic vinegar
2 tsp olive oil
Salt & Pepper
20 g pine nuts
100 g green salad (e.g. arugula or lamb's lettuce)
2 peaches or nectarines
100 g cherry tomatoes
2 balls of mozzarella
Fresh basil
Prepare the dressing:
Finely grind the Organic Ginger-Kuruma-Orange and Peach Teaballs with a mortar and pestle or knife. Mix them with honey, balsamic vinegar, and olive oil. Season with salt and pepper, and let stand briefly.
Roast pine nuts:
Roast pine nuts in a pan without fat until golden brown. Set aside and let cool.
Prepare the salad:
Wash the green lettuce thoroughly and spin dry. Cut the peaches or nectarines into thin wedges. Halve the cherry tomatoes. Drain the mozzarella and tear it into pieces.
Serving:
Arrange lettuce, peaches, tomatoes, and mozzarella on plates. Drizzle generously with the dressing. Top with toasted pine nuts and fresh basil.
The salad tastes especially aromatic if you let it sit for a few minutes before serving. The TEABALLS dressing not only brings natural flavors but also a touch of summer to every forkful. Perfect as a light lunch or a side dish for a barbecue.
