The special highlight: a sophisticated dressing with TEABALLS IKO and TEABALLS Peach. Fruity, delicately tart, and with a hint of basil – simply perfect for balmy evenings on the balcony or patio.

Ingredients:

  • 20 g pine nuts

  • 100 g green salad (e.g. arugula or lamb's lettuce)

  • 2 peaches or nectarines

  • 100 g cherry tomatoes

  • 2 balls of mozzarella

  • Fresh basil


👨‍🍳 Step-by-step instructions:

  1. Prepare the dressing:
    Finely grind the Organic Ginger-Kuruma-Orange and Peach Teaballs with a mortar and pestle or knife. Mix them with honey, balsamic vinegar, and olive oil. Season with salt and pepper, and let stand briefly.

  2. Roast pine nuts:
    Roast pine nuts in a pan without fat until golden brown. Set aside and let cool.

  3. Prepare the salad:
    Wash the green lettuce thoroughly and spin dry. Cut the peaches or nectarines into thin wedges. Halve the cherry tomatoes. Drain the mozzarella and tear it into pieces.

  4. Serving:
    Arrange lettuce, peaches, tomatoes, and mozzarella on plates. Drizzle generously with the dressing. Top with toasted pine nuts and fresh basil.
